On my way home from work tonight I stopped off to the market. While there I popped into Lapointe Fish Market and picked up some mussels, I never realized how inexpensive they were! (I also stopped in at Saslove’s for some bacon!) What to do with mussels on a Friday night? How does mussels in a coconut curry sauce sound! The recipe is from Epicurious.com.
Mussels with Coconut Curry Sauce
Ingredients
- 2 tablespoons butter
- 1/4 cup chopped shallots
- 2 tablespoons curry (I used more!)
- 1 can unsweetened coconut milk
- 1 1/2 cups dry white wine
- 3 tablespoons fresh lemon juice
- 2 small bay leaves
- 2lbs black mussels
Directions:
- Melt butter in a heavy large pot over medium heat
- Add shallots and curry powder; stir until fragrant (about a minute).
- Add coconut milk, wine, lemon juice and bay leaves; simmer 10 minutes.
- Add mussels.
- Increase heat, cover and boil until mussels open, about 5 minutes.
- Take mussels out of sauce and place in a bowl.
- Boil sauce until slightly thickened, stirring occasionally, about 2 minutes.
- Season with salt & pepper, discard bay leaves.
- Spoon sauce over mussels.
- Serve and enjoy!
