Friday Night Snack…

On my way home from work tonight I stopped off to the market. While there I popped into Lapointe Fish Market and picked up some mussels, I never realized how inexpensive they were! (I also stopped in at Saslove’s for some bacon!) What to do with mussels on a Friday night? How does mussels in a coconut curry sauce sound! The recipe is from Epicurious.com.

DSC_0133Mussels with Coconut Curry Sauce

Ingredients

  • 2 tablespoons butter
  • 1/4 cup chopped shallots
  • 2 tablespoons curry (I used more!)
  • 1 can unsweetened coconut milk
  • 1 1/2 cups dry white wine
  • 3 tablespoons fresh lemon juice
  • 2 small bay leaves
  • 2lbs black mussels

Directions:

  1. Melt butter in a heavy large pot over medium heat
  2. Add shallots and curry powder; stir until fragrant (about a minute).
  3. Add coconut milk, wine, lemon juice and bay leaves; simmer 10 minutes.
  4. Add mussels.
  5. Increase heat, cover and boil until mussels open, about 5 minutes.
  6. Take mussels out of sauce and place in a bowl.
  7. Boil sauce until slightly thickened, stirring occasionally, about 2 minutes.
  8. Season with salt & pepper, discard bay leaves.
  9. Spoon sauce over mussels.
  10. Serve and enjoy!
