Last night’s recipe comes from a recipe I found on Runner’s World. It is a quick and easy salad that includes steak! Who doesn’t love a medium rare steak? Last night we looked after a very fluffy dog, so we didn’t end up going to the gym for our weight-training day like we normally do. Instead I went for a very nice 5.5km run. This threw off our schedule a little and we ended up eating fairly late. It was great to have this meal to pull out because it was quick, easy and super tasty!
Thai Beef Salad with Mint
Ingredients:
- 12 ounces beef tenderloin or sirloin
- 4 cups Boston or romaine lettuce leaves, mesclun, or any salad greens mixture, torn
- 1 cup fresh mint leaves, torn
- 1/4 cup red onion, chopped
- 1 medium cucumber, peeled and diced
- Juice of 2 limes
- 1 tablespoon nam pla (Thai fish sauce) or soy sauce
- 1/8 teaspoon cayenne, or to taste
- 1/2 teaspoon sugar
Directions:
Heat a charcoal or gas grill or a broiler to medium-high; the rack should be about four inches from the heat source. Grill or broil the beef until medium-rare, about five to 10 minutes; set it aside to cool.
Toss the lettuce with the mint, onion, and cucumber.
Combine all remaining ingredients with one tablespoon of water—the mixture will be thin—and toss the greens with this dressing. Transfer the greens to a platter, reserving the dressing.
Thinly slice the beef, reserving its juice; combine the juice with the remaining dressing. Lay the slices of beef over the salad, drizzle the dressing over all. Serves four.

I made the dressing for this salad a little bit differently. I combined the lime juice with the thai fish sauce and water. Instead of cayenne I used Sriracha and instead of sugar I used honey. The dressing was amazing! It was hot, sweet and sour all at once. Instead of using mint I used basil, I didn’t have any mint and was way too lazy to go out just to get mint. The basil worked out really well and I would recommend trying sometime instead of the mint. This is a great meal that is easy to put together, I would definitely recommend this to anyone and everyone!
