Avocado Pita Pizza with Cilantro Sauce

If you’ve ever looked up recipes on Google, you’ve probably found a plethora of food blogs with all kinds of different recipes. Some of them are all about healthy eating, while others are all about adding as much butter as possible. Every once in a while you’ll come across a blog with some really awesome recipes and what makes them even better is when they have awesome photos. Sarah is the Queen at finding the best food blogs! Today’s recipe comes from one of these blogs, Two Peas & their Pod. Not only do they have awesome recipes but also stunning photos. I hope that my food photos are that nice one day! (Anyone want to supply me with a 50mm lense???)

One of my favourite fruits is avocado. Not only do they have a beautiful green colour but they are healthy! Most (75%) of the calories in an avocado are made up of fats, primarily monounsaturated fat. Some studies have shown that eating foods rich in monounsaturated fats can help improve blood cholesterol levels, which can in turn lead to a decrease in your risk for heart disease. So when you’re eating an avocado, you can enjoy its creamy goodness while knowing you could be helping your heart! The recipe below is for Avocado Pita Pizza with Cilantro Sauce. Avocado Pita Pizza with Cilantro Sauce

Ingredients:

To make the Cilantro Sauce:

  • 1 cup chopped fresh cilantro
  • 1 large garlic clove, minced
  • 1 tablespoon chopped green onion
  • 1 tablespoon minced and seeded jalapeño pepper
  • 1 tablespoon fresh lime juice
  • 1/4 cup extra-virgin olive oil
  • Salt and pepper, to taste

For the pizza:

  • 2 pieces whole wheat pita bread
  • 1/2 cup shredded mozzarella cheese
  • 1 large avocado, peeled, pitted, and sliced

Directions:

1. Preheat the oven to 400 degrees F.

2. To make the cilantro sauce: In the bowl of a food processor or a blender, combine cilantro, garlic, jalapeño, green onion, and lime juice. Pulse until combined and roughly chopped. With the motor running, slowly pour in the olive oil. Blend until smooth. Season with salt and pepper.

3. Divide the sauce and spread evenly on pita bread pieces. Top with shredded mozzarella cheese. Place pita pizzas on a large baking sheet and bake for 8-10 minutes, or until cheese is melted. Remove from the oven. Top pizzas with avocado slices. Sprinkle with salt. Cut into pieces and serve warm.
