I am back! After a prolonged absence, I am back to blogging. The last month has been busy at work and then I took a week off for a very nice vacation in Florida. I am also spending a lot of my time getting ready for triathlons and other outdoor events I am taking part in this summer. I am already signed up for one triathlon, a bike ride from Ottawa to Kingston and back, a 5km run and a bike ride from Ottawa to Cornwall and back. I also want to compete in a least 3 more triathlons, one of which will be Olympic distance (1.5km swim, 40km cycle, 10km run). With so much happening this summer on the athletic front I’ve been spending more time training then eating. I haven’t trained this much since I whitewater kayaked competitively.
Since I’ve been training so much there hasn’t been as much time for going out for food and I’ve been trying to eat a little healthier. (I still love my chips!) So instead of posting mostly about great restaurants and places to eat, I am going to focus more on the healthyish food that we’re making at home. I am in no way a nutritionist but I do enjoy visiting different websites and blogs and trying out different recipes that are supposed to be healthy or that I think look healthy. This doesn’t mean I won’t be going out to eat at all, plus I’ve been busy eating out in the last couple months, so there should be lots of diversity. Also for fun I might throw in a post about triathlon.
So to start off being healthy here is what we had for supper last night. Sarah found the recipe on one of her favourite blogs Eat, Live, Run. Eat, Live, Run is written by Jenna who is a classically trained chef, food photographer, freelance food writer and recipe developer. She takes amazing food photos and has some great recipes. Last night Sarah made Linguine with Shrimp and Tomato Cream Sauce. The sauce was great! It had a nice kick to it but not too spicy. I am not a huge fan of shrimp but it was pretty good.
