This is my favourite brownie recipe ever! It’s from Jamie Oliver’s cookbook Cook with Jamie, (ISBN-13:978-1-4013-2233-5) this is my second favourite Jamie Oliver cookbook. These brownies are super decadent and are awesome with vanilla ice cream or with some Grand Marnier mixed into the batter. Give them a try and let me know what you think! Ingredients:
- 1 cup and 2 tablespoons unsalted butter
- 7oz best-quality dark chocolate (70% cocoa solids), broken up
- 3/4 cup cocoa powder, sifted
- 1/2 cup all purpose flour, sifted
- 1 teaspoon baking powder
- 1-3/4 cup superfine sugar
- 4 large eggs
- optional: zest of one orange, 2-1/2oz dried sour cherries, 1-1/3oz chopped nuts
Directions:
- Preheat oven to 350 degrees Fahrenheit, line a 12 inch baking pan with wax paper.
- In a double boiler melt chocolate and butter together until smooth.
- Add cherries and/or nuts if using them
- In a separate bowl mix cocoa powder, flour, baking powder and then sugar. Add to melted chocolate.
- Beat eggs and mix until you have a silky consistency.
- Pour into baking pan and bake for about 25 minutes. Until outside is slightly springy.
- Allow to cool before removing from pan.
- Serve and enjoy!
(goes well with orange zest and crème fraiche)
